My weeknight go-to recipe for quick, easy, delicious, and blood sugar friendly pasta

After endlessly searching for a Hearts of Palm Pasta recipe, that was easy, delicious and high protein, I decided the best option was to create my own. I wanted something that would come together quickly, taste amazing and satisfy pasta cravings without spiking blood sugar. Not only does this recipe do all of that, it is also truly versatile and makes for incredible leftovers. Utilizing jar sauce, canned sun-dried tomatoes and artichoke hearts make it an ideal weeknight dinner. Feel free to swap out any ingredients depending on your taste and preference and/or use what you have on hand.

This recipe is practically a weekly occurence at our house, and I would love for it to now also become a go-to dinner at yours!

Hearts of Palm Pasta with Sausage & Mediterranean Vegetables

Time: 35 Minutes
Serves: 4

Ingredients
1 tbsp extra virgin olive oil, divided
1 lb ground Italian sausage
1 tsp sea salt
Ground black pepper to taste
1/4 cup sun-dried tomatoes
1/4 cup quartered artichoke hearts
3 cups chopped spinach
1 tsp red pepper flakes (or more if desired)
1 jar Arrabiatta pasta sauce
1 package Palmini pasta, rinsed and drained
1/3 cup feta
1/4 cup basil, finely chopped

Ingredients
In a large skillet or Dutch oven, heat 1 tablespoon olive oil over medium heat. Add sausage and cook until it starts to brown, about 5 minutes. Add sin-dried tomatoes, artichoke hearts and cook until sausage is completely cooked through, about 5 more minutes.

Add spinach and red pepper flakes. Cook until spinach starts to wilt, about 3 minutes. Add the whole jar of sauce. Reduce heat to medium and simmer for 10-15 minutes, until the flavors combine.

Rinse the Palmini pasta and heat either in a microwave for 30-60 seconds or in a skillet with a drizzle of olive oil for 1-3 minutes.

Serve pasta with sauce, topped with feta and basil, if desired.
